For Chef Michel Mustière, Culinary Director for Velas Resorts, perfecting the turkey recipe required a lot of experimentation, patience and dedication. For over 9 years, he has worked on the prized holiday turkey, the cooking of which poses a complicated challenge – a juicy center and delicate flavor with a bird quite large. That special taste that Chef Michel Mustière has achieved is shared with each of the Velas Resorts, but doesn’t go beyond there (he’s keeping it a secret, exclusive to the hotel group). Those who have managed to taste the secret recipe from Mustière, a member of the prestigious Culinary Academy of France, give it the highest ever marks.

Chef Mustière is one of 10 Maîtres Cuisiniers de France (Master Chefs of France) in Mexico and the only in Latin America to be honored with the organization’s Medal of Honor. He is also decorated with the first medal in the world from the Cooking Masters of France for culinary teaching as well as a recipient of honors from Knight of the World Order of the Culinary Academy of France.
